Hidden Value Chili

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 cup chopped onion

1 block firm tofu -- crumbled

1 tablespoon chili powder

2 teaspoons ground cumin

4 cloves garlic -- crushed

1 can red kidney beans -- (16 oz.)

2 cans chopped tomatoes -- (16 oz.)

1 can pumpkin or 1 10 oz. package frozen -- (16 oz.)

chopped spinach

Ground black pepper and red pepper flakes

to taste

Chopped avocado to top

 

Heat a pan over medium-high heat and add the olive oil.

Saute the onions until translucent, then add crumbled tofu and brown slightly.

Add the chili powder, cumin, and the crushed garlic and stir for a minute or

two.

Add the rest of the ingredients, turn heat to low, and simmer for an hour.

Add water if the mixture is too thick.

Serve over brown rice or with crusty bread.

Top with chopped avocado.

 

This recipe hides extra nutritional value so that the end result is rich and

full, but it is hard to identify the additions.

 

Nutrients per serving: 190 calories; 10g protein; 24g carbohydrate; 7g fat(1g

saturated fat, 4g monounsaturated fat, 2g polyunsaturated fat); 0mg cholesterol;

Holy Guacamole Drink

Amount Measure Ingredient -- Preparation Method

Six cups of milk

3 large avocados -- seeded, peeled and

chopped

1 can condensed milk

3 sticks cinnamon

6 tablespoons Nescafe

12 whole coffee beans

 

In a pot, bring to a boil milk with cinnamon, coffee, coffee beans and

condensed milk.

Blend avocados in a blender for one minute.

Pour

Blend into the pot with the milk and bring it up to a boil.

Remove coffee beans and cinnamon sticks before serving

Israeli Avocado Salad

1/2 cup mixed salad greens or watercress

(optional)

5 tbsp. Toasted Cumin Vinaigrette (recipe follows)

1/2 California avocado -- cut into 1-inch

chunks

1/4 cup walnuts -- toasted, very

coarsely chopped

1/3 cup diced (1/2 inch) celery

1/3 cup diced (1/2 inch) seeded cucumber

2 tbsp. finely chopped red onion

----Toasted Cumin Vinaigrette----

3 tbsp. cumin seeds -- (3 to 4)

2/3 cup mild olive oil

1/3 cup fruity olive oil

1/3 cup fresh lemon juice

salt and freshly ground pepper to taste

 

Lightly dress the greens with some of the vinaigrette and place on a salad

plate.

Toss the remaining ingredients with the remaining vinaigrette and mound on the

greens.

 

To make Toasted Cumin Vinaigrette, toast the cumin seeds in a small skillet over

low heat, stirring occasionally, until fragrant; it will take just a minute or

two.

Grind the cumin in a spice mill, then whisk together with the remaining

2 ripe genuine California avocados -- seeded, peeled and

coarsely mashed

1/4 cup prepared salsa verde (green salsa)

1 teaspoon grated lemon peel

1 tablespoon fresh lemon juice

1 teaspoon coarse garlic salt

3 tablespoons finely chopped red bell pepper

3 tablespoons chopped fresh basil leaves

1 medium shallot -- finely chopped

 

In medium bowl combine avocados, salsa, lemon peel and juice and garlic salt.

Stir in bell pepper, basil and shallot.

Serve with tortilla chips or cut vegetables.

Makes 2 1/4 cups.

Melons with Sweet Avocado Dip

Amount Measure Ingredient -- Preparation Method

1 package cream cheese -- (8 ounces) softened

1 carton sour cream -- (8 ounces)

2 tablespoons sugar

1 California avocado -- seeded, peeled and

mashed

assorted fresh melon (honey dew -- watermelon,

crenshaw, casaba,cantaloupe), seeded,

peeled and cut into bite-sized pieces

 

Blend all ingredients except melon in blender or food processor until smooth.

Cover dip with plastic wrap; refrigerate 1 hour.

To serve, spoon dip into small serving bowl and surround with melon pieces.
