Roasted Avocado Soup

Amount Measure Ingredient -- Preparation Method

8 plum tomatoes -- halved

2 medium onions -- cut in half and

sliced

2 red bell peppers -- quartered

2 garlic cloves

1 tablespoon olive oil

4 cups chicken broth

3 small California Avocados -- peeled and coarsely

chopped

1 package cream cheese -- (8-ounce) cubed

1/2 cup loosely packed fresh basil leaves

1/4 teaspoon pepper

1 small California Avocados -- peeled and chopped

2 tablespoons shredded fresh basil

 

Place tomatoes, cut sides down, in an aluminum foil-lined 15- x 10-inch

jellyroll pan.

Bake at 425° for 20 minutes or until skins look blistered.

Pour tomatoes with juices into a Dutch oven.

Set aside.

Arrange onion, bell pepper, and garlic in pan

Drizzle with olive oil, stirring to coat.

Bake at 425° for 25 minutes.

Add vegetables to Dutch oven.

Add broth, and bring to a boil.

Boil 5 minutes.

Add coarsely chopped avocado and next 3 ingredients.

Cool slightly.

Process mixture in batches in a blender or food processor until smooth, stopping

to scrape down sides. Return to Dutch oven, and keep warm.

Top each serving with 1 chopped avocado and shredded basil.

Spaghetti Squash and Avocado Salad

Amount Measure Ingredient -- Preparation Method

Avocado Oil Vinaigrette

1 medium spaghetti squash

6 mushrooms -- sliced

1/2 red and green bell pepper -- julienned

1 can sliced black olives -- (4 ounces) drained

2 California avocados -- seeded, peeled and

sliced

----Avocado Oil Vinaigrette----

3/4 cup avocado oil or light vegetable oil

1/4 cup white wine vinegar

2 cloves garlic -- crushed (2 to 3)

1 teaspoon oregano -- sweet basil,

rosemary, dry mustard and

Worcestershire sauce

Salt and pepper to taste

 

Prepare Avocado Oil Vinaigrette at least 24 hours before serving time. Halve

squash lengthwise, scoop out seeds. Place halves cut side down in large

saucepan; add water to a depth of two inches; cover and bring to a boil. Reduce

heat; simmer squash 20 minutes. Drain off water; cool squash and shred into

strands. Mix squash, mushrooms, peppers, olives and avocados in serving bowl.

Pour Vinaigrette over, toss gently and serve.

 

Vinaigrette Preparation:

Shake all ingredients together in tightly covered container. Let Vinaigrette

stand at least 24 hours.

Spicy Nachos Supreme

Amount Measure Ingredient -- Preparation Method

1 can tomato sauce -- (8 oz)

1 can diced green chiles -- (4 oz)

1/2 cup chopped green bell pepper

1 green onion -- sliced

1/4 teaspoon hot pepper sauce

1 bag tortilla chips -- (10 oz)

2 cups shredded Cheddar cheese

1 California avocado

1 teaspoon lemon juice

1/2 cup sour cream

Jalapeno pepper slices -- optional

 

Combine tomato sauce, chiles, green pepper, green onion and hot pepper sauce in

bowl; let stand 15 minutes.

Place tortilla chips in shallow 8 x 10 inch baking dish.

Pour sauce over chips; sprinkle grated cheese over all.

Broil nachos 3 minutes or until cheese melts.

Just before serving, seed, peel and mash avocado. Stir in lemon juice.

Spoon avocado mixture and sour cream on hot nachos and top with jalapeno slices.

Serve immediately.

Strawberry Avocado Parfait

Amount Measure Ingredient -- Preparation Method

2 California avocados -- seeded, peeled and

cubed

6 large fresh or thawed frozen strawberries

1/2 cup strawberry flavoured yogurt

1 tablespoon orange juice concentrate

1 teaspoon brown sugar

Shredded coconut -- optional

 

Place strawberries in a bowl; lightly mash with fork.

Add avocado cubes and gently mix together.

Spoon strawberry/avocado mixture into four long-stemmed wine glasses.

Combine yogurt, orange juice concentrate and brown sugar in a small bowl.

Drizzle yogurt mixture over strawberries and avocado and sprinkle with coconut.

Summer Avocado & Fruit Waffles

----Summer Fruit----

2 red delicious apples -- cut into 1/2 cubes

1 tsp. lemon juice

2 California Avocados -- cut into 1/2 inch

cubes

2 kiwi fruits -- sliced

1 banana sliced

1 pint strawberries -- sliced

1 pint blueberries

5 tbsp. honey

1/4 tsp. mace (East Indian spice similar to nutmeg)

----Waffles----

2 cups flour

3 tsp. baking powder

1 tsp. salt

2 tbsp. sugar

1 3/4 cups milk

3 eggs separated

4 tbsp. melted butter (slightly

cooled)

 

 

Summer Fruit

Place apples in a bowl with lemon juice to keep from browning.

Add all other ingredients.

Gently mix fruit salad topping.

Serve on top of hot waffles, with or without liquid syrup.

Waffles

Sift flour, baking powder, sugar, and salt.

Add egg yolks and milk.

Beat with a wire whisk until mixed.

Slowly mix in melted butter.

Beat egg whites until stiff.

Fold into flour mixture.

Pour into hot waffle iron.

 

Note: You may substitute homemade waffles with

frozen waffles.

 

Serving Suggestion: Serve with avocado and fruit

salad topping.
