I have - whole chipotle chili pepper - whole morita chili pepper - whole arbol chili pepper - whole pequin chili pepper Does anybody has recipes for them? Guest guest Posted March 4, 2000 Report Share Posted March 4, 2000 If they are all dried, you can hydrate them by soaking them in hot water (close to boiling) for 25 minutes. Then seed them & puree them and have some wonderful purees to swirl into soup, chili, stews. Pequins are wonderful just crushed & sprinkled into things. I did that the other night, in fact. The chili I made for my DH was not that spicy and I love spicy so I crushed some pequins and put them in my bowl. Yum. Arbols are perfect in chinese food. Just stir-fry some veggies, maybe some tofu and add a couple of arbols. Let them stir-fry and then remove them. They will flavor the whole wok. Don't bite into them - HOT. Sometimes the chinese use them in their hot dishes. A friend of mine once bit into one at a restaurant and her whole face turned red. Unless you really like chiles, not a good idea. Chipotles are great ground and sprinkled on anything. Also great hydrated and pureed. I think I have a recipe somewhere for chipotles en adobo (what you can find in the little cans in the markets). That is great pureed and put in absolutely anything you want a bit of smoky flavor in. Let me search my records. I'll come up with something for you.
