Tofu Breakfast Spread

Amount Measure Ingredient -- Preparation Method

8 ounces silken tofu -- patted dry

2 tablespoons minced fresh chives

2 tablespoons minced fresh parsley

1 tablespoon safflower oil

1 teaspoon salt, or less to taste

1 teaspoon fresh lemon juice

1 teaspoon dried basil dill, or other herb

(optional)

1/4 cup finely chopped tomato, grated carrot, or

other vegetable (optional)

 

Place all the ingredients in a food processor and blend well to achieve a smooth

consistency. Transfer the mixture to a small bowl, cover, and refrigerate for

several hours to deepen the flavor.
