Creamy Herb Dressing

Amount Measure Ingredient -- Preparation Method

1 cup silken tofu -- drained

1/4 cup soy milk

1 tablespoon olive oil

1 tablespoon cider vinegar

2 tablespoons chopped scallions

1 tablespoon chopped fresh parsley

1 teaspoon snipped fresh chives

1/2 teaspoon dried basil

1 teaspoon fresh lemon juice

1 teaspoon Dijon mustard

1 teaspoon low-sodium tamari

1/4 teaspoon salt, or to taste

1/8 teaspoon freshly ground black pepper

 

Combine all the ingredients in a food processor or blender and mix until

smoothh. Transfer to a covered container, and refrigerate.

 

Yield:

" 1 1/2 cups "
