Guest guest Posted March 3, 2000 Report Share Posted March 3, 2000 * Exported from MasterCook * Tofu Lo Mein Recipe By :The Soy Gourmet - Robin Robertson Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 8 oz package soba, udon, or lo mein noodles 1 tablespoon plus 1 teaspoon sesme oil 1 tablespoon safflower oil 1/4 cup minced scallions 1 teaspoon minced fresh ginger 1/2 cup sliced mushrooms 1/2 cup sliced carrots -- blanched 2 cups chopped bok choy 8 ounces extra-firm tofu -- cut into 1/4-inch thick strips 1 tablespoon low-sodium tamari Cook the noodles according to package directions. Drain, transfer to a bowl, and toss with 1 teaspoon sesame oil. Set aside. Heat the remaining sesame oil and safflower oil in a large skillet over medium-high heat, add the scallions and ginger, and stir-fry until fragrant, about 1 minute. Add the mushrooms, carrots, and bok choy, and continue stir-frying about 2 minutes. Add the tofu and tamari and continue to stir-fry 1 minute longer.
