I made it spicier at the table with some Bufalo Jalapeno sauce and it was really delicious. * Exported from MasterCook * Bean Burritos Recipe By : More So Fat, Low Fat, No Fat by Betty Rohde, p. 123 Serving Size : 8 Preparation Time :0:00 Categories : Beans/Legumes/Pulses Cheese Main Dishes, Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 6 " flour tortillas 1 cup onion -- chopped 1 16 oz can fat-free refried beans 1 4 oz can diced green chiles -- drained 4 dashes hot sauce 3/4 cup salsa 1 1/2 cups fat-free cheddar cheese -- shredded* Garnish: fat-free sour cream fresh tomato -- diced green chiles -- diced Stack tortillas one on top of the other, wrap in foil, and heat in the oven at 350°F for 10 minutes. In a nonstick skillet, saute the onion in 2 tbsp of water for 5 minutes or until tender. Do not drain. Add the refried beans, green chiles and hot sauce. Cook and stir until heated through. Spoon about 1/3 cup of the bean mixture into each tortilla just down the center. Spoon about 1-1/2 tbsp of salsa over the bean mixture. Sprinkle with 3 tbsp of cheese over the salsa. Roll up the tortilla and place on a foil-lined cooking sheet. Bake loosely covered in a 350°F oven for about 10 minutes, or until thoroughly heated. Serve with a dollop of fat-free sour cream, some diced fresh tomato and diced green chiles, if desired. - - - - - - - - - - - - - - - - - - NOTES : * I didn't have fat-free so I used reduced fat or whatever cheese scraps I had in the house.
