Cooking the pasta is the time consuming part of this recipe. I would think

that roasting the peppers first would be even better. Gonna try that the

next time.

Sweet Peppers with Pasta

Amount Measure Ingredient -- Preparation Method

4 large garlic cloves -- minced

1/4 cup extra virgin olive oil

3 lb red and yellow bell peppers -- cut in 2 " juliennes

2/3 cup dry white wine

1 lb penne -- cooked al dente

 

Cook garlic in oil in a large heavy skillet over moderate heat, stirring,

until golden. Add peppers, wine and salt and pepper to taste; cook,

covered, stirring occasionally until very tender - 15 to 20 minutes.

 

Toss pasta with the peppers and season with salt and pepper.
