Tofu Stroganoff

1 pound firm tofu -- cut into 1-inch cubes

1/4 teaspoon paprika

1/2 teaspoon salt

1/8 teaspoon freshly ground pepper

2 tablespoons safflower oil

1/4 cup dry sherry OR brandy

1/2 cup chopped onion

1 cup sliced mushrooms

1 tablespoon tomato paste

3 tablespoons low-sodium tamari

1 teaspoon prepared mustard

1/2 teaspoon minced fresh thyme OR 1/4 teaspoon dried

thyme

2 tablespoons cornstarch dissolved in 2 tablespoons

water

1 cup soy milk

freshly cooked noodles

Tofu Sour Cream (recipe follows)

1 tablespoon minced fresh parsley

 

Season the tofu with paprika, salt, and pepper. Heat 1 tablespoon of the oil in

a large skillet over medium-high heat and add the tofu to the skillet, stirring

to brown on all sides. Carefully add the sherry or brandy, and shake the pan

until the flame subsides. Transfer the tofu to a platter and keep warm in the

oven.

Add the remaining tablespoon of oil to the skillet, add the onion, cover, and

cook over medium heat until softened, about 5 minutes. Remove the lid, add the

mushrooms, and cook 2 minutes longer, stirring occasionally. Add the tomato

paste, tamari, mustard, thyme, and salt and pepper to taste. Stir in the

cornstarch mixture. Reduce the heat to low and slowly add the soy milk,

stirring until the sauce thickens, about 2 minutes. Add the reserved tofu.

Cook gently for 3 to 5 minutes on low heat. Adjust seasonings. Serve over

cooked noodles, topped with Tofu Sour Cream, and sprinkle with parsley.
