Guest guest Posted March 6, 2000 Report Share Posted March 6, 2000 * Exported from MasterCook * No-Meat Loaf Recipe By :The Soy Gourmet - Robin Robertson Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon safflower oil 1/2 cup minced onion 1/4 cup grated carrot 1 clove garlic -- minced 2 cups grated tempeh 1 tablespoon minced fresh parsley 2 cups fresh soft breadcrumbs 1/2 cup soft tofu 1/2 cup ground dry-roasted soybeans 1 cup cooked lentils 1/8 teaspoon cayenne 1 tablespoon low-sodium tamari 1 teaspoon salt, or less to taste 2 tablespoons tahini Preheat oven to 350F. Heat the oil in a large skillet. Saute the onion and carrot over medium heat for 5 minutes. Add the garlic, tempeh, and parsley and saute 2 minutes. Add the bread crumbs, tofu, and ground soybeans tp the onion mixture in the skillet, stirring well. Mash the lentils with a forl or puree in a food processor, and add to the mixture. Stir, and continue sauteing over low heat. Season with cayenne, tamari, and salt to taste. Cook for 10 minutes. Remove from the heat and sttir in the tahini. Pour the mixture into an oiled 9 x 5 inch loaf pan. Bake the loaf about 45 minutes or until firm and golden brown.
