Brown Sauce

1 1/2 cups water

1/4 cup low-sodium tamari

1/2 teaspoon dried thyme

1/8 teaspoon freshly ground pepper

2 tablespoons cornstarch dissolved in

2 tablespoons water

1/2 cup soy milk

 

Combine the 1 1/2 cups water, tamari, thyme, and pepper in a small saucepan and

bring to a boil over high heat. Reduce the heat to medium, whisk in the

cornstarch mixture, and simmer, stirring, for 2 minutes, or until the sauce

thickens. Slowly whisk in the soy milk, being careful not to boil. Adjust

seasonings.

Author's note: A flavorful all-purpose brown sauce that can be used on anything

from burgers and cutlets to grains and potatoes. You can add sauteed minced

onions or sliced mushrooms for added flavor.
