Guest guest Posted March 7, 2000 Report Share Posted March 7, 2000 * Exported from MasterCook * Penne from Heaven Recipe By :366 Simply Delicious Dairy-Free Recipes - Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons corn oil 1/4 cup chopped onion 2 scallions -- minced 2 tablespoons all-purpose flour 2 cups soy milk 2 large tomatoes -- peeled, seeded, and chopped 1 tablespoon chopped capers salt and freshly ground black pepper 2 cups broccoli florets -- coarsely chopped 1 pound penne OR other tubular pasta 1 cup grated soy Parmesan cheese 1 tablespoon olive oil Heat the oil in a large skillet over medium heat. Add the onion and scallions, and cook until softened, about 5 minutes. Add the flour and cook, stiirring for 2 minutes. Slowly add the soy milk, stirring constantly, to make a smooth sauce. Add the tomatoes and capers and cook 2 minutes, stirring. Season with salt and pepper to taste. Remove the sauce from the heat and keep warm. Bring a large pot of salted water to boil over high heat. Add the broccoli and cook 3 to 4 minutes. Remove with a slotted spoon and drain well. Transfer the cooked broccoli to a large bowl. Cook the pasta in the boiling salted water until tender. Drain. Add the cooked pasta to the broccoli in the bowl, along with the soy cheese and olive oil, and toss to blend. Add the sauce and toss gently. Season with salt and pepper.
