Here's one alcoholic and one non:

 

Pina Colada Punch

Pina Colada Punch

ice ring (see below)

3 3/4 20 oz. can crushed pineapple -- undrained

7 1/2 15 oz. cans Coco Lopez cream of coconut

3 3/4 46 oz. can pineapple juice -- chilled

1 3/4 quarts light rum (optional)

3 3/4 32 oz. bottl club soda -- chilled

 

Prepare ice ring in advance. In blender container, combine crushed

pineapple and cream of coconut; blend until smooth. In a large punch bowl,

combine pineapple mixture, pineapple juice, and rum (optional). Just

before serving, add club soda and ice ring.

 

TO MAKE ICE RING: Fill ring mold with water to within 1-inch of top

rim; freeze. Arrange pineapple chunks and maraschino cherries on top of

ice. Gradually pour small amount of cold water over fruits; freeze.

 

NOTE: I make ice rings out of extra punch ingredients so punch will

not get watered down. If the punch will go fast though, the ice ring with

water may be okay.

Sparkling Citrus Punch

3 1/2 46 oz. can pineapple juice

1 1/3 quarts orange juice

1 1/3 pints lemon juice

7/8 cup lime juice

1 1/8 quarts sugar

7 1/8 2 liter bott ginger ale -- chilled

 

Combine first 5 ingredients, stirring until sugar dissolves. Pour

juice mixture into ice cube trays, cover and freeze until firm. Place

four juice cubes in each tall glass; stir until slushy.

 

NOTE: Juice mixture may be frozen in an airtight container. Thaw slightly

in a punch bowl; add ginger ale, stirring until slushy.
