Guest guest Posted March 8, 2000 Report Share Posted March 8, 2000 * Exported from MasterCook * Apple Cabbage Slaw Recipe By : Cooking Light Magazine, June 1997, page 177 Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups very thinly sliced cabbage 2 cups diced Fuji or Red Delicious Apples --about 1 pound 1/2 cup chopped green onions 1/4 cup chopped fresh flat-leaf parsley 1/2 cup low-fat sour cream 1/4 cup plain fat-free yogurt 2 tablespoons cider vinegar 2 tablespoons brown sugar 1/4 teaspoon salt 1/8 teaspoon pepper 8 thin slices Fuji or Red Delicious apple 1/4 cup lemon juice 1. Combine first 4 ingredients in a bowl; toss well. Combine sour cream and next 5 ingredients (sour cream through pepper); add to cabbage mixture, stirring to coat. 2. Combine apple slices and lemon juice. Drain apple; discard juice. Arrange apple slices around salad. Yield: 4 servings (serving size: 1 cup salad and 2 apple slices).
