Vegetable Rice Toss

Amount Measure Ingredient -- Preparation Method

vegetable cooking spray

1 teaspoon sesame oil

3/4 cup diced onion

1/2 cup diced carrot

2 cloves garlic -- minced

2 10.5 oz cans vegetable broth

1/4 teaspoon salt or to taste

1/4 teaspoon freshly ground pepper

1/4 teaspoon Chinese five-spice powder

1 1/4 cups long-grain white rice -- uncooked

1/2 cup frozen English peas -- thawed

1/2 cup green onions

garnish: sliced green onion tops

 

Coat a large nonstick skillet with cooking spray. Add oil. Place

over medium-high heat until hot. Add diced onion, carrot, and garlic, and

cook until tender.

Stir in broth and next 3 ingredients into vegetable mixture. Bring to

a boil. Stir in rice and return to boil. Cover, reduce heat, and cook 20

minutes or until rice is tender and liquid is absorbed. Remove from heat.

Add peas and 1/2 cup green onions. Toss gently. Garnish if desired.
