Longhorn Caviar

 

Recipe By :Southern Living Home for the Holidays 1998 p. 126

Amount Measure Ingredient -- Preparation Method

7 plum tomatoes -- seeded and chopped

1 bunch green onions -- thinly sliced

1 jalapeno pepper -- seeded and minced

2 garlic cloves -- minced

2 tablespoons cilantro -- chopped

1 can black-eyed peas -- rinsed and drained

3 tablespoons lime juice

1/2 teaspoon salt

1/2 teaspoon ground cumin

1 teaspoon olive oil

 

Stir together all ingredients in a large bowl. Cover and chill at least 30

minutes. Garnish, if desired. Serve wilth tortilla chips. Yield: 4 cups
