Great Goulash

1 pound tempeh

2 tablespoons safflower oil

1 cup chopped onion

1/2 cup sliced carrot

1/4 cup chopped celery

2 tablespoons sweet Hungarian paprika

2 tablespoons all-purpose flour

1 tablespoon tomato paste

1 cup sauerkraut -- rinsed and drained

1/4 cup dry white wine

1 cup water

salt and freshly ground pepper to taste

1 cup silken tofu -- drained and pressed

1 tablespoon fresh lemon juice

freshly cooked noodles

 

Place the tempeh in a saucepan of boiling water. Reduce the heat to low and

simmer for 10 minutes. Drain and cut into 1-inch cubes. Heat 1 tablespoon of

the oil in a large skillet over medium heat. Add the tempeh and cook until

golden brown on all sides, about 5 minutes. Remove from the skillet and keep

warm. In the same skillet, add the remaining oil, onion, carrot, and celery.

Cover and cook over mediuum heat for 5 minutes, or until the vegetables begin to

soften. Stir in the paprika and cook 2 minutes. Add the flour and cook,

stirring, 2 minutes longer. Stir in the tomato paste until smooth. Add the

sauerkraut, wine, and 1 cup water. Stir over low heat until it comes to a boil.

Season with salt and pepper to taste. Reduce the heat to very low and simmer 5

minutes. In a small bowl, combine the tofu and lemon juice until well blended.

Slowly whisk the tofu mixture into the goulash a little at a time, blending

with each addition. Add the reserved tempeh and c!

ook gently to heat through, about 10 minutes. Serve over noodles.
