Spiced Lentil Gratin

3 tablespoons olive oil

1 cup chopped onion

1 clove garlic -- minced

2 tablespoons fresh mint, or 2 teaspoons dried

1 teaspoon ground cinnamon

2 cups vegetable stock

3 cups water

2 cups dried lentils -- picked over and rinsed

1 tablespoon tomato paste

1/2 cup dry red wine

1/4 cup minced fresh parsley, or 1 tablespoon

dried

salt and freshly ground pepper

1 cup dried bread crumbs

1/2 cup firm tofu -- drained and crumbled

1/2 cup grated soy mozzarella

 

Heat 1 tablespoon of the oil in a large saucepan over medium heat, add the onin

and cook until softened, about 5 minutes, stirring occasionally. Add the

garlic, mint, and cinnamon, and cook, stirring, for 2 minutes. Add the stock

and water and bring the liquid to a boil. Add the lentils and simmer the

mixture, covered, stirring occasionally, for 30 minutes. Add the tomato paste

and the wine, simmer the mixture, uncovered, for 15 minutes, or until the

lentils are tender. Remove from the heat, and stir in the parsley and salt and

pepper to taste. Preheat the oven to 400F. Transfer the mixture to a large

gratin dish that has been lightly oiled or sprayed with nonstick vegetable

spray. In a small bowl, toss together the bread crumbs, tofu, soy mozzarella,

and the remaining 2 tablespoons oil. Sprinkle the crumb mixture evenly over the

gratin, and bake for 15 minutes, or until heated through and lightly browned on

top.
