This is in the recipe for Hollandaise Sauce which the author recommends serving

with the Vegetable Loaf, all of which I'm sending-

Tofu Mayonnaise

Amount Measure Ingredient -- Preparation Method

1 1/2 cups firm silken tofu -- well drained

2 tablespoons safflower oil

2 tablespoons cider vinegar

1 tablespoon lemon juice

1 tablespoon Dijon mustard

1 teaspoon salt

1/4 teaspoon white pepper

1/4 teaspoon cayenne

 

Place all of the ingredients in a food processor and mix until smooth and

creamy. Refrigerate covered until chilled. Refrigerated and tightly covered,

this mayonnaise will keep for up to 2 weeks.
