Split Pea and Wild Rice Soup

1 tablespoon canola oil

1 large red onion -- diced

2 stalks celery -- chopped

2 or 3 cloves garlic -- minced

10 cups water

1 cup green split peas -- soaked for 2 hours and drained

2 large carrots -- peeled and diced

1 large white potato (peeled if desired) -- diced

1/2 cup wild rice

2 tablespoons dried parsley

2 teaspoons oregano

3/4 teaspoon ground black pepper

1 teaspoon salt

 

In a large saucepan heat the oil. Add the onion, celery, and garlic, and saute

for 5 minutes. Stir in the water, split peas, carrots, potato, wild rice, and

seasonings (except the salt), and cook for 1 1/2 to 2 hours over medium-low

heat, stirring occasionally.

Stir in the salt and cook for 5 to 10 minutes more over low heat.

Ladle the soup into bowls and serve with hearth-style bread.
