Guest guest Posted March 16, 2000 Report Share Posted March 16, 2000 * Exported from MasterCook * Pappa al Pomodoro Recipe By :Vegetarian Soup Cuisine, Jay Solomon Serving Size : 4 Preparation Time :0:00 Categories : Vegetarian Soup Cuisine Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 4 cloves garlic -- minced 4 large ripe tomatoes -- diced 1/2 teaspoon salt 1/4 teaspoon red pepper flakes 2 cups hot water 4 slices firm textured Italian bread -- cut into 1/2 " cubes 2 tablespoons fresh basil -- cut in to ribbons (chiffonade style) 1/4 cup grated Parmesan or Romano cheese -- optional In a large saucepan, heat the oil. Add the garlic and saute for 2 minutes. Stir in the tomatoes, salt, and red pepper, and cook for about 15 minutes over medium-low heat, stirring occasionally. Stir in the water and the bread and cook for 15 minutes more over low heat, stirring occasionally. Remove from heat and stir in the basil. Set aside for 15-20 minutes, if you can wait that long. Ladle into bowls and serve warm. If desired, sprinkle a little Parmesan or Romano cheese over the top.
