Macaroni and Cheese Revisited

2 tablespoons corn oil

1/2 cup minced onion

2 tablespoons all-purpose flour

2 cups soy milk -- hot

1/2 teaspoon salt

1/8 teaspoon ground nutmeg

1 pound pasta elbows -- cooked and drained

2 cups grated soy Cheddar cheese

 

Preheat the oven to 375F. Heat the oil in a saucepan over medium heat, add the

onion, and cook 5 minutes. Stir in the flour and cook for 2 minutes, then

reduce the heat to very low, and slowly whisk in the hot soy milk. Continue to

cook, stirring, for about 3 minutes, or until the mixture thickens. Season with

the salt, pepper, and nutmeg. Combine the sauce with the cooked pasta, and 1

cup of the soy cheese. Spoon into a baking dish and top with the remaining 1

cup soy cheese. Bake for 30 to 40 minutes, or until heated through.
