To download go to - http://www.ukrecipes.co.uk/ * Exported from MasterCook * Chinese Vegetarian Noodles With Black Bean Sauce Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : ClassicFM Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 350 gram chinese egg noodles 3 sticks celery 1 bunch spring onions 225 gram beansprouts 115 gram mushrooms 1 clove garlic 85 grams cooking oil -- (not olive) 2 tablespoons soy sauce 175 gram chopped tinned tomatoes 3 tablespoons black bean sauce Put the noodles to cook in 2 pints of boiling water and drain after 4 minutes. Run under cold water to stop them sticking. Trim the celery and spring onions. Split the celery into sticks and cut those across the grain into 1cm/ 1/2 inch slices. Cut the spring onions into 2.5cm / 1 inch lengths, splitting any thick white ends in half lengthwise, and rinse the beansprouts. Wash the mushrooms under boiling water; peel and finely chop the garlic. Put 2 tablespoons of the cooking oil into a large frying pan or wok, add the celery and spring onions and stir fry over a high heat for 3 minutes. Add the beansprouts, cook for 1 minute more, add the drained noodles and the soy sauce and toss together until thoroughly mixed and hot. In a separate pan, heat the remaining oil and fry the garlic until pale gold. Slice the mushrooms into half inch slices and add those and then the chopped tomatoes and finally the black bean sauce, and stir thoroughly together. Place the noodle mixture in an oval serving dish and pour the tomato and black bean sauce along the middle of the dish. Serve each person a portion of the main noodle mixture and some of the tomato and black bean savoury mixture on top. This is a main course in its own right or can be served for a large Chinese meal as one of a number of dishes.
