Ziti with Spicy Vegetable Sauce

1 tablespoon olive oil

1 red bell pepper -- seeded and chopped

4 scallions -- chopped

2 cloves garlic -- crushed

2 tomatoes -- chopped

1 cup tomato puree

1 cup soy milk

1 teaspoon Tabasco sauce

1 teaspoon minced fresh basil, or 1/4 teaspoon dried

1/2 teaspoon salt

1/8 teaspoon cayenne

1 pound ziti, or other tubular pasta

minced fresh parsley for garnish

 

Heat the oil in a large saucepan over medium heat. Add the bell pepper,

scallions, and garlic and cook 5 minutes, or until softened. Add the tomatoes,

puree, soy milk, and mix well. Stir in the Tabasco, basil, salt, and cayenne.

Simmer over low heat for 10 minutes, being careful not to boil. Meanwhile, cook

the ziti in a large pot of boiling salted water until tender. Drain and toss

with the sauce. Sprinkle with minced parsley.
