Split Pea Soup with Garlic Croutons

4 cups vegetable broth

3 carrots -- diced

1 garlic clove -- minced

1 cup green split peas -- picked over, rinsed and drained

2 onions -- diced

1 teaspoon minced rosemary

1/2 teaspoon salt

1 tablespoon olive oil

1 garlic clove -- crushed

2 ounces French bread -- cut into 12 rounds

1/4 cup chopped flat-leaf parsley

 

In a large saucepan, combine the broth, carrots, peas, onions, minced garlic,

rosemary, and salt; bring to a boil. Reduce the heat and simmer, partially

covered, stirring as needed, until the peas have disintegrated, 1-1 1/4 hours.

Preheat the oven to 350F. In a small bowl, combine the oil and crushed garlic.

Brush one side of the bread rounds wiith the garlic oil; place on a baking

sheet. Bake until crisp, about 10 minutes.

Divide the soup among 4 bowls; on each, arrange 3 bread rounds on top and

sprinkle with the parsley.
