Summer Harvest Stew

Amount Measure Ingredient -- Preparation Method

1 tablespoon + 1 teaspoon extra-virgin olive oil

2 onions -- coarsely chopped

2 garlic cloves -- minced

2 tomatoes -- coarsely chopped

2 cups fresh or thawed frozen okra -- cut in 1/2 " pieces

2 cups fresh or thawed frozen corn kernels

1 cup vegetable broth

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

2 tablespoons chopped basil

 

In a large nonstick skillet, heat the oil. Add the onions; cook, stirring as

needed, until softened, about 5 minutes. Add the garlic; cook, stirring, about

1 minute.

Stir in the tomatoes, okra, corn, broth, salt, and pepper; bring to a boil.

Reduce the heat and simmer, stirring as needed, until the okra is softened,

about 5 minutes. Stir in the basil.
