One-Pot Winter Stew

1 tablespoon olive oil

1 cup chopped onion

1 cup sliced carrot

4 medium potatoes -- peeled and cubed

1/2 pound fresh mushrooms -- sliced

2 tablespoons snipped fresh chives, or 2 teaspoons dried

3 tablespoons minced fresh parsley, or 3 teaspoons dried

1/3 cup dry white wine

1/2 teaspoon paprika

3/4 teaspoon salt

1/8 teaspoon freshly ground pepper

1/8 teaspoon ground nutmeg

3 cups cooked fresh, frozen, or canned fava beans

1/2 cup silken tofu -- well drained

1 teaspoon Dijon mustard

1 teaspoon lemon juice

 

Heat the oil in a large skillet over medium-high. Add the onion, carrot, and

potatoes, and cook 5 minutes. Reduce the heat to medium, add the mushrooms,

chives, and 2 tablespoons of the parsley and cook 5 minutes longer. In a small

bowl, combine the wine with the paprika, salt, pepper, and nutmeg. Add to the

vegetable mixture and bring to a boil. Reduce the heat to low, cover, and

simmer, stirring occasionally, 20 minutes, or until the vegetables are tender.

If too much liquid evaporates, add more wine, some vegetable stock, or water.

During the last 5 minutes of cooking, add the fava beans and mix well. In a

small bowl, combine the tofu with the mustard and lemon juice. Remove the stew

from the heat and stir in the tofu mixture. Adjust the seasonings. Transfer to

a serving bowl and garnish with the remaining 1 tablespoon of parsley.
