Moroccan Couscous Salad

3/4 cup couscous

2 tablespoons chopped flat-leaf parsley

2 tablespoons chopped cilantro

2 tablespoons fresh lemon juice

2 teaspoons olive oil

1/2 teaspoon paprika

1/2 teaspoon freshly ground black pepper

1/4 teaspoon ground cumin

1/4 teaspoon salt

1 carrot -- finely diced

1/2 red bell pepper -- seeded & diced

1/2 cup corn kernels -- (cooked)

2 tablespoons chopped red onion

 

Cook couscous according to package directions.

 

In a large bowl, combine the parsley, cilantro, lemon juice, oil, paprika,

black pepper, cumin, and salt. Add the couscous, carrot, bell pepper, corn

and onion. Toss to combine.
