Guest guest Posted December 7, 2001 Report Share Posted December 7, 2001 One of my favorite soups is from a flyer that I picked up at Whole Foods years ago called " Hearts Delight: Have a healthy, happy heart " . It is a " Cream of Vegetable " soup. My trick is to just cut the veggies very fine, and skip the blending step at the bottom. Thanks for asking about it... I haven't made it for awhile, and had actually forgotten about it although I have been enjoying some really good homemade soups this week. An even quicker one is just a miso broth base with added mushrooms & whatever veggies that I have in the house. (Brings to mind an old TV show competition " Name that Tune " ... " I can make a soup in 10 minutes " , " I can do it in 5 minutes " .. Okay, do it!) Cheers, Tammy Cream of Vegetable Soup serves 4 It's non-dairy but still creamy, thanks to the addition of oat flakes 3 cups of any 1 veg or combination cut in small chunks (cauliflower, broccoli, carrot, celery, cucumber, etc) 1 small onion, cut in small chunks pinch of sea salt or to taste 1 tsp of any herb or spice 1/2 cup rolled oats water to cover Bring ingredients to a boil. Reduce heat & simmer 1/2 hour or until vegetables are soft. Puree soup in blender or food processer to desired texture.
