The best vegan block is 'Veggie Kaas' - they also have many non-vegan soy cheeses, but they are called something slightly different '... Kaas' Veganrella is ok in a pinch, but it's texture is not as nice. for a shakey cheese (like parmesan) use the soymage brand vegan parmesan... yum it's in a canister. annie's makes a good spreadable cachew cheez. if you want ricotta then make it yourself at home using tofu - you should be able to find a recipe online. Use a nutritional yeast mixture to add to some dishes for a yummy cheez. This is especially good for home-made mac and cheez. you can find a recipe online. You may also want to try some recipes from the 'uncheese' cookbook. The above products call all be found at rainbow grocery - and most likely other natural grocers in the city.
