Guest guest Posted February 21, 2002 Report Share Posted February 21, 2002 Dear Friends, The Oakland chapter of the Unitarian Universalists for the Ethical Treatment of Animals and the Francisco-based Food and Social Justice Project will be co-sponsoring a vegan cooking class on Saturday, March 9th, from 10 am - 1 pm at the First Unitarian Church of Oakland (685 14th Street, at Castro). Answering the age-old question of what in the heck people are supposed to do with tasteless white blobs of tofu, " Creamy, Dreamy & Delicious: Healthy Cooking with Versatile Tofu " will boast an interesting, flavorful, diverse menu of easy-to-prepare dishes that can easily be incorporated into the hectic schedule of the busy adult. On the menu: * Vegan Cesar Salad * French Onion Pie * Eggless Egg Salad * Creamy Potato Salad * Dolphin-*and*-Tuna-Safe Tuna Salad * Tofu-Spinach Lasagna * Chocolate Midnight Mousse Torte with Raspberry Sauce The benefits of soy (a source of high-quality protein boasting a generous share of B-vitamins, iron, and possibly calcium [depending on the manner of processing], whilst containing no cholesterol - to say nothing of cancer-fighting isoflavones!) have garnered wide mainstream attention to the extent that most health-conscious people have considered including soy products such as tofu in their diets. It is to this group of not-yet-vegans that our cooking class is directed. While everyone is welcome to attend (of course!), we are especially encouraging people to forward this note to individuals who are pondering veganism, or just seriously considering eating more healthfully. For $25, participants will learn how to make the seven items listed, feast on generous samples of each item, be encouraged by the ease with which they can embrace a healthier lifestyle (for themselves, for the environment, and most poignantly, for the animals), and leave with armfuls of literature including recipes, resource lists, and propaganda-galore.
