Guest guest Posted March 18, 2002 Report Share Posted March 18, 2002 Hi y'all, If anyone wants to go out on a limb and play with even nutritionoally richer food - go to www.rawfoods.com for recipes - I had some AMAZING coconut sweet treats last night that were made from coconut, honey/dates, cardamom (sp?) and vanilla - blended and pressed into squares. YUM. I also have some great (and easy) carob/sprouted almond cake and cookie recipes that have turned my vegan friends into inspired raw food recipe gatherers! here it is: CAKE: sprout almonds ( soak overnight), put in food processor with carob powder and honey or dates, dash of vanilla process until it resembles a thick tasty " cake " texture - it will of course be a little more chunky than typical cooked cakes. FROSTING: cashew nuts, lemon juice, sweetner ( dates), blend in good blender until creamy - this takes a good spatula and some paitence - though I ahve timed it and with my Vita Mix it takes about 5 minutes to make. LAYER: the carob cake, frosting, sliced kiwi strawberry or whatever other fruit you want in plastic container, freeze - serve mostly frozen - and chant Yummmmmmm. We'll need to make sure we have enough tables to hold all the food (big hungry smile) plus the Park & Rec district require a permit if we have more than 25 people..
