Here we offer an exciting sampling of plant-based cuisine from over thirteen different countries or regions from around the world. We represent and celebrate the cuisine from Mexico, The Middle East, Thailand, Western and Eastern Europe, The Mediterranean, India, Italy, Jamaican Rastafarian, South Western United States, Traditional America, Japan, Greece, Ethiopia, and of course local Hawaiian. All of our dishes are dairy and egg free. We use organically and locally grown ingredients whenever possible. We include live food selections as well as wheat and oil free dishes. The names of the dishes honor some of the many paths towards love, healing and compassion. Please see our informational brochure that provides a more detailed description of the ingredients used in the dishes and some of the symbolism included on the menu. We celebrate the richness of cultural diversity and also seek to unite, through the universal ritual of eating, as one earth tribe that lives in peace and mutual respect for our precious differences and for this mysterious planet upon which we tread. We affirm the reality of vibrational healing and that the vibration of the person preparing the food has an impact upon the final outcome of the dish and upon the vibration of the person consuming the food. We feel that it is imperative to allow for the positive vibration of love and well wishing for others to be cultivated in our hearts as we prepare the food, blessing it during every stage of its preparation and presentation. We are holding the intention that the kitchen is a temple and that preparing food for others is a sacred service. To honor this, the food is sometimes referred to as ‘Prasad’- one translation of this Sanskrit word could be “food that is blessed and sanctifiedâ€. We celebrate our good fortune and that the blessings in our lives are beyond measure. We cultivate the sentiment of love and well wishing for others. May all feel this blessed. May all feel this gratitude and love. May our love for others and our celebration of the mystery and gift of life be for the benefit of all beings. We are grateful that we, unlike many, have access to abundant high quality organic food and are physically able to prepare it. We treat this food with reverence and regard the preparation of food for others as precious service. A vegetarian diet is one that does not include meat, fish or poultry. “Vegan†is a word that is used to describe a vegetarian diet that does not include the consumption of animal based products. Because it does not include animal products, the phrase ‘plant-based’ is sometimes used instead of the word vegan. A strict vegan would not consume honey, nor would they wear or use articles containing leather or fur. People chose to adopt a vegan diet for many reasons. For some it is because of the health risks that are associated with diets that are high in saturated fats and cholesterol. Many notice positive changes in their health when they switch their diet to one that includes living foods, fresh fruits and vegetables, nuts, seeds, legumes and whole grains. They discover that diet is an important variable in the healing process and that many of the illnesses that are prevalent today can be prevented, cured or minimized with the aid of appropriate changes in one’s diet and lifestyle. Some hold moral and religious beliefs that prohibit the killing or mistreatment of animals. They point to the dairy, egg, meat and veal industry as well as the fur and animal experimentation industry as needlessly inflicting enormous suffering upon sentient beings. Others chose this diet as a political statement, pointing to the fact that the environmental impact of a vegan diet is marginal compared to that which is caused by the present factory farming methods and wish to live as gently as possible upon our fragile mother earth. Vegan ‘natural’ food preparation is based upon the belief that food is best consumed in as close to its whole, natural state as possible. This means working with fresh fruits, vegetables, nuts and seeds, unprocessed grains, unbleached flours and minimally refined oils and sweeteners. It also means leaving out the harmful chemicals, artificial colors, flavors and preservatives that are unnecessarily included in many of our foods and therefore the temple of our bodies. The wonderful thing is that there is no need to compromise on taste and creativity when eating ‘the natural way’. Thank you for coming into our space. Please enjoy your meal and offer us any suggestions as to how we may serve you better. We leave you with a portion of the mission statement for The Portal’s Blossoming Lotus Café.
