Guest guest Posted July 14, 2002 Report Share Posted July 14, 2002 Here's a recent recipe that Shae developed. Caveats : this recipe needs frying and has milk. Grilled Eggplant with Mashed Tofu Stuffing 6 eggplants (long kind) 1 block, tofu 3 tomatoes, sliced 1 cup, tempura flour 1 cup, milk 1/3 cup, water salt pepper olive oil soy sauce (optional) Steps 1) Drain water from the tofu as much as possible. You can remove water further by wrapping the tofu in a hand towel and weigh it down by some means. The objective is to remove as much water from the tofu. Set aside. 2) Mix tempura flour in milk and water until consistency is viscous. Set aside. 3) Grill eggplant. When done, flatten eggplant slightly using s fork. Set aside. 4) Mash the tofu and saute with tomatoes in olive oil. Salt and pepper to taste. You can also add soy sauce if you wish. Set aside. 5) Stuff the sauteed mashed tofu mix into the eggplant and dip the entire eggplant into the tempura mix. 6) Deep fry the entire eggplant with everything on it in olive oil until sufficiently brown.
