I do, but I am sure to be taking it in products that use it, and on occasion I use it at restaurants. I am Steve, 38 yo, I live in Western WI, planning on making the west coast home after grad school ('03) I am vegetarian only since Easter '01. I cannot imagine eating otherwise. Don't really consider myself vegan, Kim, because I will partake of a little creamer in coffee and I will eat a cookie or cake that was made with eggs now and then. I am an excellent baker (and cook)and know that they taste good that way. Only recently getting used to substitutions for these ingredients. I find that people in this area consider this lifestyle choice quite extreme. I have only met a handful of people who are veg even to the point that I am. I never had a doubt or reservation about it as soon as my digestion (and health!)improved so much. It is a conversation piece for me, I am not pushy about it, but will answer questions frankly. Animals and the environment certainly are highly valid concerns we all have. I am in the health and fitness field. I can say that I have incurred some challenges speaking with strength training athletes. Mostly I hear " It is so hard to get the macro and micronutrients I need " . I say something like " You spend hours in the gym, what do you know about discipline and dedication? " It is truly an area in need of more research. Thank you for the bandwidth, the recipes, the valuable info, and I hope I can meet some of you, my friends, some day in the near future.
