Guest guest
I seem to remember seeing either a recipe for this somewhere or seeing a pre-made version in a store. Anyone have a good suggestion for a vegan version of whipped cream that will top my vegan pumpkin pie!? Thanks!!! Guest guest
I made this recently for Strawberry Shortcake, and man is it good! It whips up really well, very thick and creamy. There's a bit of a weird aftertaste if you have too much of it, but overall it's a great recipe. I put in a little Grand Marnier liquor which gave an interesting orange twist, but I won't do that next time as the orange clashed with the lemon and strawberry flavors. I bet a vanilla liquor would go great, though... [This is from Bryanna Grogan, the moderator of the Vegsource.com " New Veggies " discussion board.] BRYANNA'S WHIPPED TOPPING MADE WITH SILKEN TOFU makes about 2 c. 1 (12.3 oz.) box extra-firm SILKEN tofu 1/3 c. oil 1/4 c. maple syrup (not Log Cabin, the real stuff) 1 T. soymilk 1 and 1/2 tsp. vanilla 1 and 1/2 tsp. lemon juice pinch salt OPTIONAL: 1-2 T. of your favorite liqueur Whip ingredients together in food processor or blender until VERY smooth. Refrigerate for several hours before serving.
