Guest guest Posted November 21, 2002 Report Share Posted November 21, 2002 Hi everyone, Chris & I participated in Colleen's November cooking class, Thanksgiving for the Birds, and we learned some new things and got to try some delicious food. It was all very yummy! And, I wanted to share some good news with you! Colleen has made the recipes from her cooking class (as described in the Oakland Tribune article today) available online. As I have personally tasted everything, I would recommend them all. And, as we already made a few of the recipes ourselves on Sunday, the very next day after the class, I can testify that they really are as easy to make as Colleen and her capable assistant Lori demonstrated. http://www.generationv.org/compassionatecooks.htm Alison, welcome to SFBAVeg! You had asked about the stuffed " tofu turkey " . There is a recipe for one -- I believe it is from Friendly Foods by Brother Ron Pickarski. It is excellent. It seems similar to the one that Kim posted a link to, except it also included a recipe for the stuffing (which was good). In the " early days " before UnTurkey and Tofurkey, I had that a couple of times. It's a lot of work to make... personally, I'd go with the stuffed acorn squash that Colleen featured in her Thanksgiving cooking class; it is much easier to make.
