Guest guest Posted February 4, 2003 Report Share Posted February 4, 2003 Hi everyone, I'm going through a 10 day fast/cleansing and I'm considering taking dairy completely out of my diet when I return (to food). I've been vegetarian for over a year now but I'm not sure I'm eating a diet that is well-balanced with all the right vitamins, etc...Also, I'm not a big fan of taking suppliments or pills of any kind. I'm looking to find some good resources...either online or in the book stores that can help me transition to a balanced vegan diet. Any help would be greatly appreciated. They compare standard, vegetarian, and vegan options, and there's a section on dealing with life beyond dairy. I hear that " Becoming Vegan " is good as well, but I haven't read it and, well... Guest guest Posted February 5, 2003 Report Share Posted February 5, 2003 Hi Michael, Regarding a balanced Vegan diet, I would look into the work done by Dr. Gabriel Cousens as detailed in Conscious Eating, Depression Free for Life and the upcoming Rainbow Green Diet. He is a doctor of internal medicine, psychatrist, and a MD (H) (holistic medical doctor) with a rejuvenation facility. He is doing a lot of research to determine how to help people balance on a 100% Raw vegan diet, although his research is equally applicable to a general vegan diet. He suggests taking some self tests (as detailed in his books) (or going to his facility to get tested) to determine if you are fast oxidizer or slow oxidizer, overly sympathetic or parasympathetic. Each of these determine whenter you need more protien and fats vs. carbohydrates. His emphasis is on a higher level than just physical health, as he approaches it from the perspective of balancing out hte brain to achieve well being and higher states of consciousness. He has worked a lot with addicts with great success. He says the standard american diet creates the addictive brain, and his diet is targeted at getting people on to a diet specific for their needs (ie fast oxidizer, etc) that will get all the biochemistry in the brain working properly -- and incidently lead to greater physical health. If you go down to his facility, he tests to see what imbalances you have and does tend to prescribe supplements, but only to get you up the curve -- and likes to see you backing off of the supplements within 6 weeks to 12 weeks. (www.treeoflife.nu) The macrobiotic community also does a lot of really great work on balancing the diet from their perspective, and there are classes offered over in the East Bay. There is also a great Macrobiotic Dinner monday nights in Palo Alto where you can get more information on that. I don't know the URL, but you could do a search on Palo Alto and macrobiotic dinner. Elaina Love, a raw food chef extraordinare, will be offering a series of raw food classes in March and April -- the first she has done in the Bay Area in a long time. http://www.purejoylivingfoods.com/ She doesn't do much in terms of " balancing " the diet, but the recipes are great and if you combine that with Dr. Cousens work, you'll be happy. I've been having " orchstrated pot lucks " with my friends where I assign each one a recipe (all Elaina's up to this point) and then we get together and make them. They have been loving the recipes and getting more and more into raw foods because of it -- especially the Black Forest Brownies and Meltaway Peppermint Patties!! Oh, yes, and one of hte best books I ever read on balancing the diet was Food and Healing by Anna Marie Colbin. She writes more from the macrobiotic perspective. I personally have more of a raw food bent, but currently am working to encorporate Macrobiotic and raw principles into my life. " I think it's an outstanding resource for developing a healthy diet. It's being marketed as a weight-loss book, but don't let that put you off, it's really about eating for health. Since he's trying to reach a wide audience, he doesn't explicitly say " you have to be vegan " but that's the clear implicit message. He presents a lot of scientific and medical studies to back up his approach, as well as thoroughly debunking some of the fad diets out there, like the Zone Diet, etc. His key concept is that Health=Nutrients/Calories, i.e. eat high nutrient/low calorie foods. In practical terms, he stresses that at least 90% of calories should come from unprocessed plant foods: vegetables (esp. leafy green, both raw and cooked), fruits, legumes, raw nuts, whole grains. Refined foods, including flour, sugar, oil, and animal foods should be less than 10% of calories, which means eating very, very small amounts of these foods since they are so high in calories (or best of all, completely avoiding them). This probably isn't new information to most of you, but it's great to get positive reinforcement from time to time. I recommend it!
