It makes quite a large amount.) Make this wonderful, savory pâté with the rich flavor of mushrooms and herbs a day ahead to give the flavors a chance to develop. Serve it with pita wedges, party rye bread, or crackers. INGREDIENTS 2 Tbs. minced onion 2 cloves garlic, minced 1 Tbs. olive oil 1 lb. fresh mushrooms, chopped 2 Tbs. vegetable stock 1 Tbs. white flour 8 oz (1 cup) soft silken tofu 1/2 tsp. dried oregano 1/2 tsp. dried basil 1/2 tsp. dried marjoram (if you don’t have marjoram, double the amount of oregano) 1 Tbs. vegetarian Worcestershire sauce salt and pepper to taste Sauté the onions and garlic in the olive oil for 2 minutes. Add the mushrooms and the vegetable stock. Cover and let the mixture cook until mushrooms are completely tender. Mix in the flour thoroughly and sauté for an additional 2 minutes, stirring mixture to keep it from sticking. Place mushroom mixture and remaining ingredients into a food processor or blender and process until they form a smooth pâté (you may need to add a little water to smooth the mixture out). Refrigerate for at least 2 hours. Serve with crackers or spread on bread. Serves 8. SURPRISINGLY NONDAIRY CURRY DIP From Delicious Living magazine With its unique blend of sweet and spicy flavors, we predict this quick dip will become your new favorite party treat. INGREDIENTS 1/4 cup raisins 3 tablespoons water 1 package (12.3 ounces, or close to it - whatever your box size is) Mori-Nu Silken Tofu, firm 2 tablespoons chopped onion 1/2 clove garlic, peeled 1/4 cup unsweetened shredded coconut 1/2 teaspoon salt 1-1/2 teaspoons curry powder 1/4 teaspoon cinnamon 2 teaspoons lemon juice 2 tablespoons canola oil Vegetable crudités, Tortilla Chips, pita, or potato chips for dipping Soak raisins in water while assembling other ingredients. In a blender or food processor, combine remaining ingredients in the order listed. Add raisins and soaking water. Blend until well mixed and creamy (it will still have some texture).
