I recently started working at a local cafe here on the the coast (El Granada), and they've gotten a few requests recently to add a tofu scramble to the menu. Being a vegetarian (with vegan aspirations), I was quick to let them know that I'd love to see it on the menu as well. Anyway, they're quite receptive to the idea, so I was wondering if anyone has a great recipe for a tofu scramble or some variation (even if cheese is included) that they think would be a wonderful addition to the menu of a neighborhood cafe. Guest guest Posted April 8, 2003 Report Share Posted April 8, 2003 Hi Lisa, In my experiance the best thing a restaurant can do with tofu scramble is to start with a base and then add different options to it. Alot of breakfast menus have different scrambled egg flavour combinations (we had things like Mushrooms, Spinach and Caramelised Onion; or Roasted Yams,Corn and Garlic; or Artichoke Hearts, Cherry Tomatoes and Olives etc.)an these choices can all be prepared with tofu instead. The more choices you have the more the vegans will come back. At my last restaurant we mashed medium firm tofu with salt, pepper, garlic and enough turmeric to give it a light yellow hue and put this in an insert on the cold table. Then people could choose if they wanted plain tofu scramble or with veggies, and the line cook would saute it up in a pan with a little oil and until piping hot and season to taste (often with a dash of tamari at the end). You can add water to the pan , the amount you add will create a hard , medium or soft scramble. The problem with any hard and fast recipe is that flavour and texture varies with ingredients and the size of the portion your making. The crucial part is that the cook has respect for what they are doing. Tell them respectfully and tactfully that tofu eaters like flavour and seasoning and to try eating the finished product, especially when they start out, to get a sense of what it needs. The crucial factor in any restaurant meal is love for what you are doing and sometimes chefs don't have alot of time for vegans. I hope that yours has an open heart and realises that its not only the vegans who are customers looking for the best tofu scramble in town. Hope this is useful.
