I see that it's gotten dissed, but the key is to shred it and layer it on top of the sauce but below the toppings so that it doesn't dry out. It definitely melts and tastes good in combo with everything else on the pizza. Granted, it is not thick and stringy like real cheese, but it works great for our purposes. Tofutti slices might have sugar (don't recall off the top of my head, but a lot of their products do), but if that's not an issue for you, they are superb for grilled cheese sandwiches. The recipes aren't dirt cheap to make, but they're cheaper than anything on the shelves. Plus, they are much closer to a whole foods product than commerical brands and are lower in fat. One commercial cheeze I'm really fond of is Soymage's vegan parmesan. It's not the easiest stuff to find in my experience, but call around to find it. I'm a bit annoyed with it lately, though. I always buy the mozzarella and shred it in the food processor for use on pizzas. The last 2 packages that I bought were so watery, that when I shred it, some of it would just goo right up instead of, well, shred. I think the next time I buy it I'll do the tofu trick first of wrapping it in paper towels and pressing it an hour or so to dry/firm a bit. When I need a mozz. cheese and I, and the HFS, are out, I use Road's End powdered Mozzarella chReese. Just an ounce of water to reconstitute it and it pours right on the pizza with no problems. I buy it by the bulk bag from The Mail Order Catalog (http://www.healthy-eating.com ) so it comes out a bit cheaper and just keep it in the refrigerator.
