I cook the noodles (spiral noodles or shaped noodles work well, but spaghetti is more traditional) . While they are cooking, I prepare the sauce. If the peanut butter is chunky, you may have to add more water. You want a thick sauce, but thinner than sticky peanut butter. Mix the sauce in rinsed cooked noodles and add some veggies. In Chinese restaurants, you usually find some scallions and maybe some bean sprouts added. Other good additions are shredded carrot, finely cut up broccoli. Spicy Peanut Sauce Modified from " Vegan Vittels " by Joanne Stepaniak 1/ 2 C natural peanut butter 2 Tbs soy sauce or Braggs 1 tsp mild vinegar 1 tsp pure maple sytup 2 cloves garlic, pressed 1/ 2 tsp ground ginger 1/8 to 1/ 4 tsp cayenne pepper (to taste) 1/ 2 to 2/3 cup water or vegetable broth Blend all ingredients in food processor or blender Quote Link to comment Share on other sites More sharing options...
