Recipe: sweet potatoes with spicy peanut sauce

Peanut Tofu Sauce

modified from a recipe on www.drmcdougall. com <http://www.drmcdoug

all.com/>

 

4 sweet potatoes or yams

1 12.3 ounce package silken tofu

½ cup peanut butter

2 tablespoons Bragg's Liquid Aminos

2 teaspoons Tabasco or other hot sauce

 

Bakes the sweet potatoes at 350 degrees for about 40 minutes.

 

After the potatoes have been baking about half an hour, place the

tofu in a food processor and process briefly. Add the remaining

ingredients and process until very smooth.

 

Slice open the potatoes lengthwise and scoop some of the sauce over

each open half.

 

This is good served with soup and/or salad.
