Tofu is basically a cheese made from soybeans. We will learn how to make tofu from dried soybeans, going through the steps of producing " Milk " out of the beans and then coagulating and molding the curds into tofu in the same way that cheese is produced from milk. We will then make a wonderful soup with the homemade tofu and maitake mushrooms. We will discuss the different types of tofu that are produced in Japan and China and make several dishes using them, savory and sweet producing an entire 4 course meal based around this incredible ingredient that is now widely consumed in the US and many parts of hte world by vegetariand and omnivores.
