A popular party-pleaser, these Mummy Dogs are delicious and healthier than traditional “pigs in a blanket.” Make this Halloween fun and compassionate by sharing animal-friendly snacks! Ingredients: 1 pack of veggie dogs (try Tofu Pups and Smart Dogs) mustard (to taste) peppercorns or mustard seeds (for decoration) Biscuits: 2 cups flour 1 Tbs. baking powder 1/2 tsp. salt 1/4 cup margarine 3/4 cup soy milk Directions: Mix all the dry ingredients into a bowl. Using a fork, blend the margarine into the dry ingredients until the mixture breaks down into fine particles; add the soy milk and stir until the particles cling together. Knead for 1 to 2 minutes or until the dough is smooth; add flour until dough is not sticky. With a rolling pin, roll the dough out to about 1/2 inch thickness. Cut into strips, and wrap around the veggie dogs; create the eyes using peppercorns, yellow mustard seeds, or black mustard seeds. Place on an ungreased cookie sheet and bake at 450 F for 12 to 15 minutes! The American Heart Association (AHA) and the Mayo Clinic recently issued health advisories on foods that have positive effects on our health - soy protein is one of the two. Soy contains substances that can help reduce or inhibit the effects of elevated cholesterol, specifically low-density lipoprotein (LDL) (known as the “bad” cholesterol). The advisory cited the conclusions of 38 controlled clinical studies, revealing that daily soy consumption is " both safe and effective in reducing LDL cholesterol by up to 8% in people who have elevated cholesterol levels. " Moreover, soy protein actually increased levels of " good " high-density lipoprotein (HDL). Standard American Diet (SAD) tends to be high in animal protein, and contains excessive saturated fat and cholesterol. Disappointed by the lack of veggie options, she decided to call the concessions manager the next day. Surprised by a positive response, Johanna was inspired to take action and work to give fans a choice – she set out to add veggie dogs to the menu at every major league ballpark. Encouraged by vegetarians and animal-rights supporters, she launched a website, www.SoyHappy.org, and started lobbying concession managers. The Chicago White Sox were the first big league team to offer veggie dogs and 14 more followed since.
