Fruits & Veggies Fight Cancer

A diet high in fruits and vegetables can significantly decrease esophageal

cancer risk, according to a new study published in the American Journal of

Gastroenterology. Researchers compared people’s risk of contracting Barrett's

esophagus- a precursor to esophageal cancer - with their consumption of foods

rich in the antioxidants vitamin C and vitamin E. Barrett’s esophagus is a

condition that occurs when acid reflux stimulates changes in the lining of

the esophagus.

Among the 900 study participants, those with the highest dietary intake of

vitamin C had a 52% lower risk of developing Barrett's esophagus, and those

with the highest intake of vitamin E had a 75% lower risk. Researchers note

that the condition and its effects appear to come mainly from dietary sources,

rather than supplemental sources.

This study is one of many that validates that the fact that high antioxidant

intake from fruits and vegetables actually decreases the risk of developing

cancer.

Food for Thought & Tummy

If Stephanie cooks, they will come! Stephanie Schmidt believes in spreading

the message of compassion for animals by sharing her love of a veg lifestyle. As

a vegetarian for 15 years and now a vegan, she made a deal with her friends

for the holiday season that they couldn’t refuse. This year, she offered to

prepare a vegan dinner with all the trimmings and they were more than happy to

eat vegan this Thanksgiving! For those friends who opted not to join her

festivities, she printed out information on turkey-alternatives “to help

everyone have a delicious and Gentle Thanksgiving.”

Stephanie finds that a plant-based diet makes her feel good about herself

because she is doing her part to help animals and the planet. By giving her

friends the gift of a healthy, cruelty-free meal, she is demonstrating that

everyone can enjoy the holiday while making a meaningful difference!
