Apple Stuffed Holiday Squash

This Thanksgiving can be the best ever! Celebrate your holiday with

Ingredients:

 

1 apple, skinned, cored & diced

1/2 cup barley

2 Tbs. fresh basil, chopped

1/2 cup walnuts, chopped

2 Tbs. maple syrup

1 tsp. cinnamon

2 acorn squashes

2 Tbs. olive oil

1/2 cup apple juice

 

Directions:

 

Cook barley according to the package directions and set aside.

Combine apples, basil, walnuts, maple and cinnamon in a medium bowl; mix in

the barley.

 

Wash and cut the squashes in half across the middle and remove the seeds; cut

the ends off the bottom of each half so they will sit flat; sprinkle each

half with olive oil and place on a baking sheet or baking dish.

 

Fill each squash center with the stuffing mix, cover with foil, and bake

covered at 350 F for one hour; remove the foil and bake for 20 minutes or

until squash is tender and browned.

 

Boil 1/2 cup of apple juice until it becomes syrupy, then drizzle over squash

before serving.

Veg Diet Reduces Heart Disease

A new report reveals that a low-fat vegan diet reduces heart disease risk in

people with type 2 diabetes more than a diet based on the American Diabetes

Association (ADA) guidelines. The 22-week study, published in the Journal of

the American Dietetic Association, examined 99 people with type 2 diabetes on

either a low-fat, low-glycemic vegan diet or a diet based on American Diabetes

Association recommendations.

Findings reveal that the vegan diet dramatically cut consumption of

cholesterol, fat, and saturated fat, and increased healthful fiber,

beta-carotene, and vitamins K and C intake, compared with the diet based on ADA

guidelines. Almost half of the participants in the vegan group reduced, if

not eliminated, their medication, compared with only 26% of participants in

the ADA group. Overall, the vegan group had higher intake of vegetables, fruit,

nut and soy protein, and cereal fiber, and a reduced intake of trans fat.

While participants in both groups improved overall health, the vegan group

experienced significantly greater reductions in blood sugar levels, weight, body

mass index, waist circumference, and LDL (“bad”) cholesterol. “These findings

should encourage anyone with diabetes to talk to their physician about

adopting a vegan diet to manage their disease and reduce the risk of a heart

attack” says the lead study author.

Inspiration

The Tofurky Trademark
