Spicy Gingerbread Cookies

Holidays are the perfect time to share good food and compassion! These Spicy

Gingerbread Cookies are perfect for the occasion. Completely free of animal

ingredients and cholesterol, these amazing treats are an animal-friendly way to

indulge. Make them as a special gift for your loved ones (offer the recipe

too!), and let them know that a cruelty-free celebration is a joyful

occasion!

 

Ingredients:

 

1/3 cup canola oil

3/4 cup sugar

1/4 cup molasses

1/4 cup plain soymilk

2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. ground nutmeg

1/2 tsp. ground cloves

1/2 tsp. ground cinnamon

1 1/2 tsp. ground ginger

 

Directions:

 

In a large bowl, beat together oil and sugar for about 3 minutes; add

molasses and soymilk.

 

In a separate bowl, sift together all the other ingredients, then add in

batches to wet mixture; mix together with a firm spoon until well combined

(dough should be stiff).

 

Flatten the dough into a disk, wrap in plastic wrap and chill for an hour

(Note: if chilled longer than an hour, let it sit for 10 minutes before

proceeding).

 

Preheat oven to 350 F and lightly grease your cookie sheets.

 

On a floured surface roll the dough out to a little less than 1/4 inch thick;

cut out in shapes with cookie cutters or glass and gently place on cookie

sheets.

 

Bake for 8 minutes then remove from oven and let cool completely if

decorating.

Egg Consumption & Diabetes Risk

Consumption of eggs can increase the risk of type 2 diabetes, according to a

new study published in the November issue of Diabetes Care. The researchers

examined data from the Physicians' Health Study I involving 20,703 men and

the Women’s Health Study involving 36,295 women. Participants continued in

the studies for about 20 years and 12 years respectively.

Findings revealed that people were more likely to develop type 2 diabetes as

their egg consumption per week increased. Men who ate more than 7 eggs per

week were found to be 58 percent more likely to develop type 2 diabetes. For

women, the risk was increased up to 77 percent. The researchers concluded

that any quantity of egg consumption is associated with an increased risk of

type 2 diabetes, and people who consume more are in higher risk.

All-Inclusive Celebrations

Around Thanksgiving time, animal sanctuaries promote cruelty-free eating by

celebrating with those who traditionally suffer most this holiday: turkeys.

Some sanctuaries welcome guests for a potluck dinner, a great way to share

recipe ideas and prove that holiday meals served vegan-style are superior in

flavor, nutrition, and compassion.

Woodstock Farm Animal Sanctuary has been hosting their ThanksLiving event

for the past 3 years. This year, more than 250 people attended to visit the

rescued cows, pigs, turkeys and others on the farm, as well as dine with

like-minded individuals for an amazing culinary experience. Local restaurants

provided a gourmet vegan meal, which included Black Eyed Pea Cakes with Chipotle

Aioli and Wild Truffle Tarts with White Truffle Oil, Celebration Roasts

smothered in Mushroom Brown Rice Gravy, Grilled Island Yams, Wild Rice Salad,

and Sweet Potato Biscuits. Speakers like Rory Freedman made the event festive

and educational.

Vegan groups around the country are meeting to celebrate the upcoming holidays

without cruelty. Find one or make your own, and finish the year being proud

of your choices!
