The more love, joy, and compassionate food, the merrier for all. Celebrate the holidays with gourmet food that’s easy on the wallet, simple to prepare, and free of animal products and cholesterol. Try this Rosemary-Hazelnut Seitan, which features seitan, a low fat, high protein food, also known as “wheat meat” (product below). Top with your favorite veggie gravy. Ingredients: 1 cup hazelnuts, toasted 3 tsp. fresh rosemary, minced 2 cups flour 3-5 Tbs. olive oil 1 box chicken-style White Wave seitan (see product section) Salt & pepper (to taste) Directions: Place the hazelnuts and rosemary in a food processor and blend until fine; transfer to a medium bowl, add the flour, and stir to combine. Heat the olive oil in a large skillet over medium heat; dip the seitan chunks in the hazelnut mixture and coat completely (Note: If the seitan does not come packaged in liquid, dip each piece in a little bit of water first). Place seitan pieces in the oil and fry until lightly browned and crispy on both sides; drain on paper towels and serve hot.
