Recipe

Rosemary-Hazelnut Seitan

The more, the merrier! The more love, joy, and compassionate food, the

merrier for all. Celebrate the holidays with gourmet food that’s easy on the

wallet, simple to prepare, and free of animal products and cholesterol. Try this

Rosemary-Hazelnut Seitan, which features seitan, a low fat, high protein food,

also known as “wheat meat” (product below). Top with your favorite veggie

gravy.

Ingredients:

1 cup hazelnuts, toasted

3 tsp. fresh rosemary, minced

2 cups flour

3-5 Tbs. olive oil

1 box chicken-style White Wave seitan (see product section)

Salt & pepper (to taste)

Directions:

Place the hazelnuts and rosemary in a food processor and blend until fine;

transfer to a medium bowl, add the flour, and stir to combine.

Heat the olive oil in a large skillet over medium heat; dip the seitan chunks

in the hazelnut mixture and coat completely (Note: If the seitan does not

come packaged in liquid, dip each piece in a little bit of water first).

Place seitan pieces in the oil and fry until lightly browned and crispy on

both sides; drain on paper towels and serve hot.

White Wave Seitan

Seitan, (pronounced SAY-tan) is the Japanese term for cooked wheat gluten,

which is very high in protein and low in fat. A tradition among Buddhists for

hundreds of years, it has an amazing ability to mimic meat in taste and

texture. Seitan works great in main dishes, replacing animal protein with a

cholesterol-free, healthier, and low-calorie protein. Try it in a pot pie,

sandwich, or serve it as a main dish with your favorite dressing or gravy.

White Wave offers a line of conveniently packaged pre-made seitan. Take your

pick of 3 great varieties: Traditional, Stir Fry Strips, and Chicken-Style.

Seitan and other amazing meat-alternatives are available at health food stores

and online to make your holidays even better!

Nuts for Health

A new study released by Harvard School of Public Health shows that eating more

nuts can reduce your risk of dying from heart disease. The Nurses Health

Study, released in August, tracked more than 85,000 nurses for 14 years and

those who ate 5 ounces or more of nuts per week reduced their risk of dying from

heart disease by 35 percent.

Nuts are packed with heart healthy nutrients such as monounsaturated and

polyunsaturated fats, vitamin E, folate, magnesium, copper, potassium and

fiber. Adding as little as 1 ounce of nuts per day can provide all of the health

benefits they have to offer.

While nuts are an excellent source of nutrients, experts do caution against

overindulging, as they are a calorie-dense food. Here are some healthy ways

to include nuts in your diet: sprinkle them on top of your cereal; use them to

replace croutons on salads; bring pasta, rice, or couscous to life with a

sprinkling of chopped nuts; add great flavor to steamed or sautéed vegetables

with a handful of chopped nuts.
