Oats, nuts, seeds and dried fruits offer so much flavor, texture and crunch, making this dish fun to eat. Serve this yummy, nutritious granola as a special cereal or treat, or package it up and give it to loved ones as a holiday gift. Ingredients: 3 cups oats 1/3 cup shredded coconut 1/3 cup sunflower seeds 1/3 cup chopped pecans 1/3 cup chopped almonds 1/2 tsp. cinnamon 1/3 cup extra virgin olive oil 1/2 cup pure maple syrup 1 tsp. vanilla Raisins and/or dried dates, cherries, cranberries (to taste) Directions: Stir together oats, coconut, seeds, nuts, and cinnamon in large bowl. Mix in combined oil, syrup, and vanilla, then microwave for 6 minutes, stirring occasionally. Add dried fruit and microwave for an additional 1-2 minutes.
