Holiday Cheer Raisin Granola

Here’s a recipe that’s easy to prepare, sweet to eat, and packed with

powerful health benefits. Oats, nuts, seeds and dried fruits offer so much

flavor, texture and crunch, making this dish fun to eat. Serve this yummy,

nutritious granola as a special cereal or treat, or package it up and give it to

loved ones as a holiday gift.

Ingredients:

 

3 cups oats

1/3 cup shredded coconut

1/3 cup sunflower seeds

1/3 cup chopped pecans

1/3 cup chopped almonds

1/2 tsp. cinnamon

1/3 cup extra virgin olive oil

1/2 cup pure maple syrup

1 tsp. vanilla

Raisins and/or dried dates, cherries, cranberries (to taste)

Directions:

 

Stir together oats, coconut, seeds, nuts, and cinnamon in large bowl.

Mix in combined oil, syrup, and vanilla, then microwave for 6 minutes,

stirring occasionally.

 

Add dried fruit and microwave for an additional 1-2 minutes.

Press into baking dish coated with nonstick spray and let cool.

Spoon into a jar to give as gift or enjoy it yourself.

Raisins are known for their high antioxidant content, natural sweetness and

dietary fiber. New research at Ohio State University also shows that raisins

have a low to moderate glycemic index (GI), a measure of how food affects

blood sugar levels. GI is a useful tool in diabetes management, weight loss and

sports nutrition.

This is according to recent research published in the journal Phytochemistry

Letters. Study findings reveal that raisins possess antimicrobial

phytochemicals which suppress growth of some oral bacteria associated with gum
